General description & Applications
Malic acid is a dicarboxylic acid with the formula HO2CCH2CHOHCO2H, found in apples, pears, grapes and many other fruits. It confers a tart taste to wine, It is the active ingredient in many sour or the source of tartness. Malate, salt or ester of malic acid, is an intermediate in the tricarboxylic acid (Krebs) cycle, formed from fumarate by the addition of an -OH group and itself oxidized to form oxaloacetate using NAD+ as a cofactor. Malate is a source of CO2 in the Calvin cycle. The action is similar to that of tartaric acid. In addition to the application as a food additive its application field include; Acidulant, Preservative, Food and Feed Additive, Metal cleaning and plating, Retardant in plasters and cements, Cosmetics, Pharma products and Textile industry.
Storage and transportion
It should be stored in a dry and ventilated warehouse and avoid sundry odors pollution. Sunlight and rain should be prevented during transportation.
