Applications/Function:
It is a kind of natural edible pigment obtained by purified and emulsified from tumeric pigment. It contains demethoxycurcumin, bisdemethoxycurcumin. The rufous liquid color is soluble in water, but insoluble in oil and absolute alcohol. At PH 2.0-7.0, the color is yellow and stable; at PH above 7.0, it is salmon pink or rufous. it can be used in the coloring of pastry, candy, cakes, condiment, pickle, essence of chicken and puffed food.
Curcumin is a natural product with antioxidant, anti-tumor promoter, and anti-inflammatory properties. Curcumin inhibits the induction of NOS in macrophages. |
